We wanted to have the gaps really nice on John's roadster.  This involved trimming the hood for a good fit. With this trimming, the folded edge was removed. Since we still wanted a folded edge, we welded a 3/8" strip back on to the back edge of the hood top (bottom side). This edge is TIG welded, then sanded and hammered smooth for a nice finish.  Seven of the eight hood edges required this attention.
